Gastronomy in Spain is, as everybody knows, outstanding. We all love, paella and jamón, but there are other excellent gastronomic choices unknown to the general public that are equally exceptional and Madrid offers the possibility to discover them all. Today I will suggest a restaurant from Murcia region:
el Caldero. Have you ever tried such suggestive dishes as
paparajotes,
matasuegras or
zarangollo? Do you know what
mojama or
hueva is? You should!
El Caldero is located in calle de las Huertas 15, a street that deserves to be visited on its own. A typical restaurant not following the decoration trends of the newcomers, quite simple but large enough to arrange for large groups of people.

The best of el
Caldero is the excellent quality of all ingredients; they came directly from Murcia region in weekly expeditions. The fish from Cabo de Palos, the vegetables, including “
ñoras” and “
habitas tiernas” from the “
Huerta Murciana” known in Spain as the best vegetable garden in the country, the rice, “
Bomba” variety from Moratalla and the delicious sausages and morcon from the "
Chato Murciano" (short nosed) pig, a breed of domestic pig originating from Murcia. Despite its danger of becoming extinct, the
Chato Murciano is a well-managed pig known for its production of bacon and lean pork.
